Summer Delight Salad


  • 2 small cantaloupes, halved, seeded
  • 1 pint strawberries, hulled
  • 1 cup lemon or pineapple sherbet
  • 1/4 teaspoon ground black pepper
  • 1/2 cup Knott's Berry FarmĀ® Strawberry Preserves
  • 1/4 cup orange juice
  • Mint sprigs (optional)

  1. REMOVE fruit from melons with melon baller. Arrange melon balls and strawberries in melon halves. Top each with scoops of sherbet.
  2. MIX preserves and orange juice; spoon over sherbet. Garnish with mint, if desired.

Yield:4 servings
