Summer Delight Salad
- 2 small cantaloupes, halved, seeded
- 1 pint strawberries, hulled
- 1 cup lemon or pineapple sherbet
- 1/4 teaspoon ground black pepper
- 1/2 cup Knott's Berry Farm® Strawberry Preserves
- 1/4 cup orange juice
- Mint sprigs (optional)
REMOVE fruit from melons with melon baller. Arrange melon balls and strawberries in melon halves. Top each with scoops of sherbet.
MIX preserves and orange juice; spoon over sherbet. Garnish with mint, if desired.
